Description
- Shape: typically cylindrical, diameter between 12-14 cm, flat surfaces, slightly convex heel measuring from 6-8 cm.
- Rind: thick, white but turns brownish-grey when ripe.
- Texture: soft, creamy, no or very few small eyes, white but summer cheeses tend to be more straw-yellow.
- Flavour: sweet, distinctive, pleasant, gets stronger as it ripens.
- Shelf-life: 60 days.
