Description
  • Shape: typically cylindrical, diameter between 12-14 cm, flat surfaces, slightly convex heel measuring from 6-8 cm.
  • Rind: thick, white but turns brownish-grey when ripe.
  • Texture: soft, creamy, no or very few small eyes, white but summer cheeses tend to be more straw-yellow.
  • Flavour: sweet, distinctive, pleasant, gets stronger as it ripens.
  • Shelf-life: 60 days.

  • Certification: EC Identification mark – IT 02 129 CE.
  • Transportation: refrigerate between 6 and 10 °C.
