About us

The cheese dairy was set up in 2002 with the intention of optimizing the production and processing of locally produced milk by adopting the traditional, yet practical, cooperative system. Almost two million litres of milk per year are supplied by approximately 50 local farms belonging to Fromagerie Haut Val d’Ayas Co-operative; this milk is then used to produce approximately 18,000 wheels of Fontina, and other types of cheese.

After concluding this imaginary journey through time and the cheese making process, you will feel more than an ordinary customer, but an active player who has chosen a particular farming model and method of cheese production which begins in the pastures and ends on our dining table.
